Banana oat protein pancakes topped with yoghurt and summer fruits

These banana oat protein pancakes have become a regular breakfast for us, and they’re particularly easy to make when we’re travelling. We usually make the batter in our Ninja Blast 12V Portable Blender, which is just the right size for a batch of pancakes.

Method

If you’re using the Ninja Blast, add the ingredients in this order:

  1. Almond milk, up to the MIN LIQUID line
  2. Egg
  3. Banana
  4. Protein powder
  5. Rolled oats

Blend until smooth.

Because this mixture is fairly thick, you may need to blend it a couple of times. Give the blender a shake between blends if needed.

Once smooth, pour into a lightly greased pan and cook your pancakes as usual.

Having trouble blending the batter?

This is a fairly thick mixture, and if your banana is particularly large, the batter can sometimes end up thicker than expected.

If you’re using the Ninja Blast 12V Portable Blender, the blades can occasionally struggle with thicker mixtures. Usually, adding a little more liquid and giving it another blend is enough to sort it out.

If the blades have stopped turning altogether, a quick shake or changing the angle of the blender can help get things moving again.

Why we like these

These are one of our go-to breakfasts when we’re travelling because the ingredients are simple, they’re filling without being too heavy, and the batter can be made entirely in the Ninja Blast. There’s also very little washing up, which is always a bonus when your kitchen is the size of a cupboard!

A few pancake tips

Don’t make the batter too thick. The size of your banana can make a surprisingly big difference to the consistency. A particularly large banana can turn this into a very thick batter, so don’t be afraid to add a little extra almond milk.

Let the batter sit for a minute or two. The oats and chia/protein ingredients (if you’re using them) will continue absorbing liquid, so you may need another splash of milk before cooking.

Keep the pancakes fairly small. They’re easier to flip and tend to cook more evenly.
